As it happens this has been the first warm and sunny day in the Hague for (what feels like) ages. We’ve been haunted with thunder storms, heavy (like filling a water bucket in one night-heavy) rain and lots of lightning for some weeks now and despite todays beautiful weather I’ve just been craving soup for a while (how was I suppose to know that it would be a salad kind of day today?). Enjoy my ridiculously simple and fast Broccoli and Cheese soup.
Broccoli and Cheese Soup with a dash of Sherry.
3 medium sized shallots
2 onion stock cubes
150 grams of aged cheese (I used 48 months)
2 dl (0,8 cups) white wine
4 dl (1,6 cups) of water
7,5 dl (3,2 cups) of cream
(surprise ingredient) 1 tbsp of sherry
1/2 tbsp of chopped Rosemary
This is how
1. Chop onions into smal pieces and fry in a pan with butter during 2 minutes.
2. Add wine and let simmer during 4 minutes.
3. Add water, cream, rosemary and broccoli, let boil softly during 10-15 minutes.
4. Add grated cheese and sherry. This soup is now ready to serve!
