The weekend is finally here, celebrate with this Goat Cheese burger and Beetroot slaw

The long lost weekend is finally here (what took you so long?). One of the many great things about the weekend is the cooking (or at least the eating). Time to check the web for just that recipe that gets your mouth watering ticking. Here’s a LCHF, Low Carb, Gluten free and Dairy free weekend dish for you.

Goat Cheese Burger
gives 5 large burgers

Ingredients
1 beetroot
1 egg
1 onion
salt and pepper
400 g minced beef
5 slices of goat cheese (about à 80 g)
60 g pine nuts
1 bag of chard shots

This is how
1. Peel the onion and the beetroot.

2. Chop the onions in small pieces and grate the beetroot.

3. Mix minced beef, beetroot, onion, egg, salt and pepper into an even mixture.

4. Shape the mixture into 5 flat burgers.

5. Barbecue the burgers or fry in medium hot pan.

6. Meanwhile you roast the pine nuts in a medium hot pan no butter/fat.

7. Fry the goat cheese slices in a hot pan with butter/coconut fat so that they get a brown surface.

7. Now you build your burger with chard shots, beetroot slaw, burger, goat cheese and pine nuts.


Beetroot Slaw

Ingredients
6 beetroots
2 dl (0,84 cups) of Hellman’s mayonnaise
2 tsp Dijon mustard
1 apple
salt and pepper

This is how
1. Peel the beets and the apple and grate them.

2. Mix with mayonnaise, mustard, salt and pepper.

3. Serve with burgers.
