Low Carb / Gluten free Extra Cheese Grilled Cheese Sandwich

Yesterday me and H saw Chef at the cinemas. Afterwards, naturally, food was all I could think of, and in particular grilled sandwiches. So this morning I went on a grilled sandwich quest. I didn’t have much in the fridge but this still came out yummy (which cheese bombs doesn’t?). I’ll present to versions for you, one grilled cheese sandwich and one (wait for it..) DOUBLE grilled cheese sandwich.

Double Grilled Cheese Sandwich

Grilled Cheese Sandwich
Makes 3-4 sandwiches

Ingredients
1 batch of my flatbread (any lowcarb bread will probably do, although I recommend without seeds)
aged cheese
mayonnaise
french mustard
tomato

This is how
1. Divide bread into pieces the same size.

2. Spread a thin layer of mayonnaise and mustard on one side.

3. Slice cheese and put on the same side (a go for a lot of cheese but it’s always individual).

4. Put tomatoes on top of the cheese.

5. This is the part where you can go single cheese or double cheese. If you wanna go single, you fry them in butter, low – medium temperature, with the spreaded sides up. If you wanna go double cheese, you put butter in the pan and when it’s heated you add grated cheese and when it has melted you fry your sandwiches (still with spreaded sides up) until you have a delicious cheese crust. Yum!
