Apple and Cinnamon Low Carb, Gluten free, Paleo Pancakes

I’m an optimist in many ways (this is what I’m telling myself). I love all seasons for its very own charm. Take fall, when the leaves start falling and you can bring them inside, the apples taste in their very special fall-way and cinnamon seems like a perfect seasoning for everything. With that said, you can understand that this picture below is a bundle of fall-love from me to you.

Paleo, low carb, gluten free, dairy free, cinnamon and apple pancakes.

Cinnamon and Apple Pancakes

Ingredients
2 (organic) eggs
1,5 dl (0,6 cups) of unsweetened almond milk
a large pinch of salt
0,5 tbsp Psyllium Husk  (read about it, buy it here)
butter or coconot fat
1/2 apple
0,5 tsp cinnamon

This is how
1. Whisk eggs and then add almond milk and whisk again.

2. Peel and grate apple.

3. Add apple, salt, cinnamon and psyllium husk to the eggs and milk and whisk all together.

4. Pour half of the batter in medium preheated pan, tilt it so that you even the batter, turn when the batter looks completely dry on the side facing up.
