Creamy and Hot Shrimp Pasta

Went to the market yesterday and bought some fresh shrimps, there’s just something special about buying fish at a farmers (fishers?) market wouldn’t you say? Any way, in case you were wondering about the weekend food- it’s here! Can I tempt you with a Spicy and Creamy Shrimp Pasta?

Low Carb/Lchf Hot and Creamy Shrimp Pasta

Ingredients
  1. Low Carb Pasta (click here for recipe)
  2. 1 yellow onion
  3. 1 bundle scallion
  4. 1 clove of garlic
  5. 2,5 cm fresh ginger
  6. 1-2 fresh chillies
  7. 1 tsp grounded cumin
  8. 1,5 tsp curry paste
  9. 1 x 400 g (14 oz) crushed tomatoes
  10. 1,5 dl (0,63 cups) tap water
  11. 1,5 dl (0,63 cups) cream (if you like coconut cream I think it would be a good match as well)
  12. 1 bundle fresh coriander
  13. 1 kilo (35 oz) unpeeled shrimp
Instructions
  1. Chop onion (peel it first), scallion, ginger (peel it first) and chillies. Crush garlic.
  2. Fry on medium heat in butter a couple of minutes.
  3. Add spices and curry paste and stir a couple of minutes.
  4. Add water and crushed tomatoes let simmer 10 minutes.
  5. Peel shrimps and put in a bowl in the fridge.
  6. Add cream and coriander, let simmer additional 5 minutes.
  7. Mix with shrimp.
  8. Serve with Low Carb Pasta and Raita.

Ingredients
  1. 1 carrot
  2. 6 cm cucumber
  3. 3 dl (1,26 cups) greek yoghurt
  4. 0,5 tsp grounded cumin
  5. 0,5 tsp paprika
  6. 1 dl (0,42 cups) fresh coriander
  7. salt
Instructions
  1. Peel and chop carrots.
  2. Peel cucumber, remove its seeds with a spoon, chop it.
  3. Add yoghurt to a bowl and add spices.
  4. Put vegetables into the yoghurt, mix.
  5. Chop coriander and to the mix and serve!
