Low Carb, Paleo and No Sugar (!) Saffron Buns

I don’t know about you but I’m counting the days until it’s time for all the christmasy things to do. Today I just couldn’t hold it together anymore (I usually can’t) so I made a quick start and baked some Saffron Buns. I think this is a Swedish occurrence but they’re delicious so if you haven’t tried them – do! It’s the first year around I made them Paleo i.e. dairy free, it turned out great! They do get a coconut flavor so if you prefer less go with the dairy option!

Ingredients
  1. 4 eggs + 1 yoke
  2. 1,5 -2 tsp honey
  3. 1 g minced saffron
  4. 125 g (4,4 oz) coconut yoghurt (or curd/cottage cheese if you don't need it to be dairy free)
  5. 50 g (1,8 oz) coconut fat (or butter if you don't need it to be dairy free)
  6. 2 tsp baking soda
  7. 1 dl (0,42 cups) Aman Prana coconut flour
  8. 3 tbsp psyllium husk
  9. raisins
Instructions
  1. Use an electric blender to whisk the eggs and honey, about 5 minutes.
  2. Add saffron, yoghurt and melted coconut fat. Whisk one more time.
  3. Add baking soda + a tiny pinch of salt, coconut powder and psyllium husk and whisk again. Let it sit for a couple of minutes
  4. Divide the mixture into about 7 buns.
  5. Role each one in your hand and then put it on a cutting board, role it into long rolls.
  6. Then you start rolling one side into the middle, the next one you do the same but at the opposite side.
  7. Mix an egg and brush it lovingly (not too much) at the buns.
  8. Lastly you put raisins in the two centers of your roll (although I didn't have any raisins so had to do without).
  9. Bake 20 minutes in preheated oven 150 C (302 F) hot air. If you don't have hot air add about 25 C (77 F) to the number.

  1. Haha I sooo recognize this! Can’t wait until I can bake all sorts of saffron cakes and put up the christmas lights, but the deal at home i 1 of advent ;)
    By the way, I made your eggplant Masala yesterday… Oh my gosh! I absolutely loved, so fresh tasting!
