Christmas Bread that’s Low Carb and Gluten Free

This bread is really common in Sweden around Christmas time (any other countries?), and for me it’s a must. A slice of this bread with butter and cheese. Heavenly! The recipe is from Swedish Blogger Therese but changed with my own Christmas Spices that also makes it Gluten Free.

Low Carb and Gluten Free Christmas Bread

Ingredients
  1. 6 eggs
  2. 1 dl (0,42 cups) water or cream
  3. 2,5 dl (1,06 cups) almond flour
  4. 0,75 dl (0,3 cups) potato fiber
  5. 0,5 tbsp baking powder
  6. 1 tbsp psyllium husk
  7. 1,5 tbsp of Mind the Home's Christmas bread spices (find it below)
  8. 1 tbsp liquid honey
  9. --------------------------------------------------------------------
  10. 6 tsp ground cloves
  11. 4 tsp bitter orange
  12. 4 tsp anise
  13. 2 tsp ground fennel
  14. 0,4 tsp cardamom
  15. 2 tsp salt
Instructions
  1. Use an electric mixer to whip the eggs real fluffy.
  2. Add honey and cream, mix again.
  3. Add rest of the ingredients and give it a last mix and let rest 5 minutes.
  4. Pour into a bread mold (I usually put a baking paper in to avoid the bread getting stuck).
  5. Bake 35 minutes at 170 C (338 F) hot air. If you don't have hot air, just add 25 C (77 F) to the number.
