Low Carb/LCHF/Gluten Free Parmesan Crêpe stuffed with Creamy Whiskey Mushrooms.

Yesterday I took a break from pregnancy haze to get revenge on these babies. I made them last week and they just weren’t right (in a weak moment I was prepared to blame it all on pregnancy tastebuds). This time around me and H decided we nailed it. This recipe serves two four dinner or for as a starter.

Parmesan Crêpe filled With Creamy Whiskey Mushrooms

Ingredients
  1. 1,5 dl (0,63 cups) almond milk, unsweetened
  2. 2 eggs
  3. 0,5 tbsp psyllium husk
  4. 50 g (1,7 oz) parmesan
  5. 250 g (8,8 oz) fresh champignons
  6. 2 shallots
  7. 1/2 an apple
  8. 3 dl (1,27 cups) cream
  9. 1 mushrooms stock cube
  10. 1,5 tsp whiskey
  11. 50 g (1,7 oz) arugula
Instructions
  1. Chop shallots and fry in butter on low heat.
  2. Chop mushrooms in 4 parts and add to the pan. Let this simmer until the mushrooms have released all its water.
  3. Meanwhile, whisk almond milk, eggs, psyllium husk into a smooth mixture. Grate parmesan and add.
  4. Back to the mushrooms (they should be ready by now), pour cream and stock cube into the pan.
  5. Peel and chop apple into small pieces and add to the pan, let this simmer until it has a stew texture (really thick).
  6. Meanwhile, get back to the crêpes. This mixture is enough for two so stir it and pour half of it into a low heat preheated pan with coconut fat or butter. Be patient, allow it to take several minutes on each side to get really crisp.
  7. Last thing you do is to add whiskey to the stew, then put half of it in the middle of one crêpe, add some arugula and fold it/role it. Make sure you serve it with the opening end facing the plate to avoid it unfolding it self.
  8. Enjoy!
Notes
  1. It might feel like the cream will never thicken and you should use some thickener but don't! Just have patience and it will sort it self out.
  2. Remember low heat when you fry the crêpes. Too much heat and they will burn. Instead - have patience.
