Low Carb and Gluten Free Lemon Cheesecake

I’ll take a tart cake over a chocolate cake any day of the week, which inevitable puts me at war with my husband. Don’t take this the wrong way, I’ll cram down a chocolate dessert, but this sweet vanilla and cream flavor mixed with organic sweet yet sour lemon is an oh so fresh way to end any three course dinner or just for a preppy Sunday afternoon coffee.

I’ve heavily reduced sugar in the cream part of the cheesecake (and used honey in the crumble) but I was a little afraid of using honey in a vanilla cream setting since it’s easily takes over. Any experiences in this to share folks?

Ingredients
  1. 4,5 dl (1,9 cups) almond powder
  2. 1,5 tsp liquid honey
  3. about 4 pinches of salt
  4. 75 g (2,6 oz) butter

  6. 3 dl (1,3 cups) cream
  7. content of one vanilla bean
  8. 3 eggs
  9. 0,5 dl (0,21 cups) sugar
  10. 100 g (3,5 oz) cream cheese
  11. 10 tbsp fresh lemon juice
Instructions
  1. Melt butter and pour honey and some pinches of salt in it.
  2. Add almond powder and mix. Taste to make sure there's enough salt (you want it to taste salty).
  3. Press into a baking pan with removable bottom, bake 180 C (356 F) hot air 8 minutes and then put in freezer. If you don't have hot air add 25 C (77 F) to the number.
  4. Whisk 3 egg whites into a hard (hard!) foam.
  5. Mix 3 egg yolks, cream cheese, sugar, lemon juice and content of vanilla bean (split the vanilla bean in half diagonal and scrape the inside to retriew the black vanilla).
  6. Whisk cream into soft foam.
  7. Turn cream cheese mixture into the cream and then turn it into the egg whites.Pour on top of the frozen almond bottom and freeze at least 3-4 hours.
  8. When you serve it, allow 30 minutes to soften. Grate lemon peel to add extra umph.
Notes
  1. When you turn something you use a spatula and carefully fold the two mixtures into each other instead of whisking. This is to keep the fluffiness you created when whisking them.
