Low Carb and Sugar Free Swedish Cardamom Buns

In Sweden we eat something called Semla. It is suppose to be eaten during a specific time in spring but in all honesty, day after the holidays, and these little sweeties start showing up in bakery counters and blogs. It’s a sweet Cardamom Bun filled with Sweet Almond Paste and whipped cream. It’s truly delicious. This year I made a Low Carb and sugar free (!) version of the Cardamom Bun and you know what? No need for Almond Paste, no need for whipped cream, it’s awesome just the way is. I know what you’re thinking- “Just a bun? No Cream? No nothing? Really?”, but I promise you, it is gold. GOLD.

Sugar Free Cardamom Buns
  1. 4 eggs
  2. 1,5 dl (0,63 cups) cream
  3. 2,5 tbsp liquid honey
  4. 2 tbsp coconut powder (I use Aman Prana)
  5. 2 dl (0,84 cups) almond flour
  6. 2 tbsp psyllium husk
  7. 2 tbsp baking protein
  8. 2 tsp baking powder
  9. 2 tsp ground cardamom
  1. Whisk eggs with an electric mixer until smooth and thick.
  2. Add cream and honey, whisk again.
  3. Add all dry ingredients and whisk again. Leave mixture 10-15 minutes, give it one last mix.
  4. Shape into 5-6 buns, use wet hands to shape them better.
  5. Bake 15 minutes 170 C hot air (338 F) if you don't have hot air, add 25 C (77 F) to the number.
  6. Eat as they are, or serve with sweet Almond Paste and Whipped Cream.
  1. Baking protein is a no flavor protein powder that you can use in smoothies, baking etc. (I use a whey protein powder with no sugar). It is used in baking not only to increase level of protein but also to make the baking goods more fluffy.

Low Carb Sweet Almond Paste
  1. 2 dl (0,84 cups) almond flour
  2. 6 tbsp cream
  3. 0,9 tbsp liquid honey
  1. Mix all ingredients, cool 5 minutes before using.
  1. To get an even more authentic almond paste, grind your own almond flour.
