Delicious Rolls -Low Carb/Paleo/Gluten Free

Who doesn’t love Poppy Seeds? And not only because of the fun name, but because it really gives bread and rolls that extra umph.

Rolls - Low Carb/Paleo/Gluten Free
  1. 3 eggs
  2. 1 dl (0,4 cups) unsweetened almond milk
  3. 2 tbsp psyllium husk
  4. 2,2 dl (0,9 cup) almond flour
  5. 2 tsp baking powder
  6. 1 large pinch of salt
  7. 3 drops of honey
  1. Preheat oven to 200 C (392 F) hot air (if not hot air add 25 C/77 F).
  2. Whisk eggs with electric mixer until they are REALLY fluffy.
  3. Add almond milk, a pinch of salt and mix.
  4. Add all other ingredients and mix together, leave batter 10 minutes.
  5. Use wet hands to roll 5 buns and put on a baking paper.
  6. Brush with whisked egg and add poppy seeds on top.
  7. Bake in oven about 20 minutes.

    • Hi Jeanette! Thank you :-) I mean regular almond flour- sometimes I fall in to old habits of calling it powder.

  1. I’m still not sure about the almond flour. In Germany most people use the press cake which you get from an oil mill. This kind of almond meal (almond flour) has much less fat than regular almonds. Cakes, buns and breads come out quite different with this kind of meal. Or do you use the full fat almond flour, like from almonds, which have just been in a regular food processor?

    • Hi Julia! I’m not sure about the flour you are referring to, I’ve never heard of it. The one I use is a full fat almond flour that is very similar to grinding your own (in a food processor).
