Low Carb Meatball Sandwich with Beetroot Salad

This is a perfect Sunday lunch or dinner. Come to think of it, it’s perfect for which ever day of the week it might be!

Low Carb Meatball Sandwich with Beetroot Salad

Ingredients
  1. Mind the Home's Low Carb Christmas Bread (you'll find it here)
  2. 700 g (24 oz) minced beef
  3. 2,5 tbsp liquid beef stock (or 2,5 beef stock cubes which you can dissolve in warm cream)
  4. 0,5 yellow onion
  5. 1 dl (0,42 cups) cream
  6. salt and pepper
Instructions
  1. Bake bread.
  2. Preheat a pan with boiling water.
  3. Chop onion in fine pieces, fry until soft (frying is optional).
  4. Mix all the ingredients (including onion). If necessary heat the cream and dissolve the stock cubes.
  5. Role the mixture into meatballs, boil about 8 at a time during 5 minutes.
  6. Remove meatballs from boiling water into a strainer a couple of minutes.
  7. Fry the meatballs from the strainer until they have a nice color.
  8. Repeat until you're done.
  9. Slice the bread and add butter on the slices.
  10. Slice meatballs and put on top of the bread.
  11. Top it with a rich amount of beetroot salad.
  12. Enjoy!

Ingredients
  1. 250 g (8,9 oz) beetroot
  2. 1/3 of an apple
  3. 3/4 dl (0,3 cups)greek yoghurt
  4. 1 dl (0,42 cups) mayonnaise
  5. salt and pepper
Instructions
  1. Boil beetroots until soft and then leave in cold water to cool down.
  2. Peel and chop into small pieces.
  3. Peel apple and chop into smaller pieces than the beetroots.
  4. Mix beetroots, apples, yoghurt, mayonnaise, salt and pepper.
