Thank god for Tapas (a.k.a leftovers)! We accidentally (and I blame pregnancy brain here) knocked on friends door this evening and thought that we were having some light foody snacks that in return would make dessert back home in our apartment the perfect Sunday food balance. Only, this was not the Sunday. I’d mistaken next Sunday for this Sunday and no one answered the door. Anyway, that’s when leftovers, I mean Tapas! are perfect!
This evening therefore offered a Pear and Sprout Salad, Guacamole (recipe below), Coleslaw (you’ll find it here), Tomatoes, fried Halloumi and fresh Mint. It was perfect!
- 2 ripe avocados
- 1 glove of garlic (or more if you won’t be around people the day after)
- 1 dl (0,4 cups) creme fraiche
- juice from 1/2 lime
- Peel and mash the avocado to your prefered texture with a blender.
- Press garlic and add creme fraiche and lime into the avocados.
- Mix with a spoon.
