In Sweden we call Wednesdays a smaller version of Saturday. And why not spread the fun right? So here’s a Little Saturday Low Carb and Gluten Free Cake to celebrate the fun!
Low Carb Apple Cobbler
- 3 dl (1,27 cups) potato fiber (this is low in carbs and you can find it here)
- 1 tbsp psyllium husk
- 2 tbsp sugar
- pinch of salt
- 100g + 100g butter
- 4 apples
- 2 tbsp cinnamon
- Peel and chop apples into small pieces. Mix with cinnamon in a baking dish.
- Slice butter with a cheese slicer and cover the apples.
- Use room temperated butter and mix together with sugar, psyllium husk, potato fiber, sugar and salt. Spread the crumble on top of the butter on the apples. Bake in oven 200 C (392 F) hot air 25 minutes. If you don't have hot air just add 25 C (77 F) to the number.
