Low Carb and Gluten Free Vanilla Custard

I don’t even know if it’s simply “Custard” or if it’s “Vanilla Custard”. I’m not a native speaker. But I do know that there’s no Cobbler in this family without Vanilla Custard and since my last post was a recipe for Apple Cobbler I should do what I can for world peace and also post this recipe.

Low Carb Vanilla Custard
  1. 3 dl (1,26 cups) cream
  2. 2 dl (0,85 cups) milk
  3. 4 egg yolks
  4. 0,75 -1 tbsp tbsp sugar
  5. 1 vanilla bean
  1. Mix milk, cream and sugar in a pan.
  2. Slice the vanilla bean on the middle, scrape the inside and add to the cream mix, also put the vanilla bean in the there.
  3. Heat while stirring, until it is almost boiling, remove from stove.
  4. Whisk 4 egg yolks in a bowl and pour into cream while whisking heavily. Then put the pan back on the stove and stir until it thickens (this can take 10 minutes or so). Do not let it come to a boil - the yolks will get stale.
  5. Let it cool in the fridge (if you don't prefer a hot sauce) then serve with a yummy pie!
