Low Carb and Gluten Free Rhubarb Cobbler

In my family there is someone who doesn’t like strawberries (I know, weird) and therefore rhubarbs have always been a very summery treat in my childhood. So my freezer is loaded with fresh organic rhubarbs, and the blog will probably keep filling with recipes. I serve this pie with my Vanilla Custard.

Low Carb Rhubarb Cobbler

Ingredients
  1. 3 dl (1,27 cups) potato fiber (this is low in carbs and you can find it here)
  2. 1 tbsp psyllium husk
  3. 2 tbsp sugar
  4. pinch of salt
  5. 100g + 100g butter
  6. 5 rhubarbs
  7. 2,5 tbsp honey
Instructions
  1. Peel and chop rhubarbs into small pieces. Mix with honey in a baking dish.
  2. Slice butter with a cheese slicer and cover the rhubarbs.
  3. Use room temperated butter and mix together with sugar, psyllium husk, potato fiber, sugar and salt. Spread the crumble on top of the butter on the rhubarbs. Bake in oven 200 C (392 F) hot air 25 minutes. If you don't have hot air just add 25 C (77 F) to the number.
