Non Alcoholic Schnapps and Herring!

Tomorrow the Swedes celebrate Midsummers Eve. A long time tradition to celebrate good fortune in agriculture, but now a days more a way of celebrating summer with flowers in the hair and eating herring and drinking schnapps. In bad weather. Because it is always raining on Midsummers Eve (which suits well, since this is the typical Swedish summer -why be a hypocrite?).

Anyway, here’s a non alcoholic schnapps for all you drivers, preggers or just simply non drinkers. I’m also throwing in a healthy Herring favorite from the table.

Non alcoholic schnapps

Non Alcoholic Ginger Schnapps
  1. 2-3cm ginger
  2. 1 tbsp sugar
  3. 3 tbsp lemon juice
  4. 4 tbsp water
  1. Slice the ginger thin
  2. Mix everything together in one bowl, make sure that the sugar dissolves
  3. Let it stay in the fridge for at least half a day
  4. Take away the ginger before you serve

Dill and Onion Herring
  1. 1 can of pre-pickled herring
  2. 1/2 dl (0.2 cups) fresh dill
  3. 1 red onion
  4. 1 tbsp allspice
  1. Cut the onion in small pieces
  2. Crush the allspice
  3. Cut the dill
  4. Mix everything together with the pre-pickled herring
  5. Herring is ready to serve, but can also stand in the fridge for a couple of days, that will enhance the flavours
