Lchf /Low Carb Sushi

Due to the fact that my husband constantly talks about sushi (and that I needed to shut him up) I just had to come up with a recipe for a LCHF kind. So for all you Sushi lovers out there, take a minute and check this out (but if you could, don’t check the picture and the technique too close).

Low Carb / LCHF Sushi
  1. 1 head of cauliflower
  2. 125 ml creme fraiche
  3. 5 tbsp rice vinegar
  4. 1 tsp sugar (or a dash of honey)
  5. sushi paper (or what ever it is called)
  6. 1/2 avocado
  7. 1/4 cucumber
  8. smoked or fresh salmon
  9. wasabi
  10. 1 tomato
  11. 1 shallot
  12. soy sauce
  1. Shred the cauliflower and boil about 15 minutes.
  2. Strain it thoroughly in a strainer with the help of pressure from a bowl (you really need to dig in there and get the water out).
  3. Let it cool (or rinse in cool water before straining it).
  4. Mix rise vinegar, sugar/honey and creme fraiche - mix with the cauliflower.
  5. Make small and long pieces of the cucumber and avocado. Chop onion. Remove core from tomato and also make small long pieces. Slice salmon.
  6. Now, make a layer of cauliflower on the sushi paper with the help of a spoon and patting, in the middle or beginning you put the fillings you prefer in a row, then you role it with your hands or with the help of a sushi mat.
  7. Dip in soy sauce!

  2. I used tomato, onion and avocado in one sort and avocado, cucumber, salmon and wasabi in one.
